  • Seasonings: Salt & pepper, Badia seasoning, garlic powder, Cajun seasoning, Worcestershire sauce, and hot sauce for a little heat.
  • Holy Trinity Mix: Onion, celery, and bell pepper—these form the flavor base.
  • Garlic Cloves: Whole peeled cloves for stuffing into the meat.
  • Vegetables: Golden potatoes, baby carrots, and sliced sweet onion.
  • Gravy Base: Flour, store-bought beef gravy, unsalted beef broth, water, bay leaves, and Lipton Onion Soup Mix.

How to Make Cajun Roast & Gravy

Sear the Meat: In a large Dutch oven, drizzle a little olive oil. Season the roast and place it seasoned-side down to sear for 5-7 minutes until golden brown. Flip, season the other side, and cook for another 5-7 minutes. Remove and set aside. Cut slits into the roast and stuff with whole garlic cloves.

Prepare the Gravy Base: In the same Dutch oven, add butter and the holy trinity mix. Cook until translucent, then stir in flour and a few drops of hot sauce. Let combine for about 2 minutes. Add the jar of gravy, beef broth, water, and all seasonings except the soup mix. Bring to a slight boil.

Cook the Roast: Add the roast back into the Dutch oven. Cover and cook in the oven at 325°F for 2½ hours.

Add Vegetables & Continue Cooking: Add potatoes, carrots, sliced onions, and Lipton Onion Soup Mix to the Dutch oven. Cover and cook for another 3 hours until the meat is tender and the vegetables are cooked through.

  • Badia seasoning
  • Garlic powder
  • Cajun seasoning
  • Worcestershire sauce
  • Holy trinity mix onion, celery, bell pepper
  • Peeled garlic cloves
  • Golden potatoes
  • Baby carrots
  • 1/2 sweet onion sliced
  • 1/2 stick unsalted butter
  • 1/4 cup all-purpose flour
  • 12 oz Heinz Savory Beef Gravy
  • 32 oz unsalted beef broth
  • 32 oz water
  • Tabasco hot sauce
  • Bay leaves
  • 2 packs Lipton Onion Soup Mix

Instructions

  • Add the roast back into the Dutch oven. Cover and place in the oven at 325°F. Cook for 2½ hours.
  • Add potatoes, carrots, sliced onions, and soup mix. Cover and let cook for an additional 3 hours until the meat is tender and the vegetables are fully cooked.
