4th of July Fruit Salad

This 4th of July fruit salad combines strawberries, raspberries, blueberries, and pineapple tossed in a frozen lemonade concentrate dressing with fresh mint. Easy, festive, and ready in 15 minutes.

Ingredients

  • 1 pint fresh strawberries tops removed and halved
  • 1 pint fresh raspberries washed
  • 1 pint fresh blueberries washed
  • 1 pint fresh pineapple chunks or 1 whole pineapple, cut
  • 1/2 can frozen lemonade concentrate thawed for 10 minutes
  • Fresh mint leaves for garnish

Optional

  • 1 shot vodka for a boozy version
  • Pineapple cut into star shapes for a festive 4th of July presentation

Instructions

  • Prep all the fruit. Remove the tops from the strawberries and slice in half. Wash the raspberries and blueberries. Cut the pineapple into chunks or use a small star-shaped cookie cutter to cut pineapple slices into stars for a festive touch.
  • Let the frozen lemonade concentrate thaw at room temperature for about 10 minutes until it is pourable but still cold. Start with half the can and add more to taste.
  • Add all the fruit to a large bowl. Pour the lemonade concentrate over the top. Add the vodka if using. Toss gently until everything is evenly coated.
  • Scatter fresh mint leaves over the top and serve immediately or refrigerate until ready to serve.

Notes

Start with half the lemonade can and taste before adding more. The concentrate is very sweet and concentrated and a little goes a long way as a dressing.
The pineapple star shapes are a small but impactful detail for a 4th of July presentation. A small star-shaped cookie cutter and a few pineapple rings is all it takes.
For the boozy version, stir the vodka in with the lemonade concentrate before pouring over the fruit so it distributes evenly throughout the bowl.
This salad is best served the same day. The raspberries soften quickly and the fruit releases juice over time.
