Ingredients

  • Arugula about 4–5 cups
  • 1 cup candied pecans
  • ½ cup dried cranberries
  • ½ cup goat cheese crumbles
  • 2 apples thinly sliced

For the Dressing:

  • 2 Tbsp olive oil
  • 1 Tbsp maple syrup
  • 1 Tbsp lemon juice
  • Salt & black pepper to taste

Instructions

  • In a small bowl, whisk together olive oil, maple syrup, lemon juice, salt, and pepper to make the dressing.
  • In a large serving bowl, add arugula and top with candied pecans, dried cranberries, goat cheese crumbles, and sliced apples.
  • Drizzle the dressing over the salad just before serving.
  • Toss gently and enjoy immediately!
