Black Bean & Pork Carnitas Tacos

A flavorful, slow-cooked taco recipe made with tender pork, black beans, and a zesty citrus sauce. Perfect for an easy, hands-off dinner!

Ingredients

For the Pork & Beans:

  • 4 lbs boneless pork roast/shoulder cut into large chunks
  • 1 tbsp Badia complete seasoning
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp cumin
  • 1 tbsp Magic Pork/Veal seasoning
  • 1 large onion thinly sliced
  • 1 lb bag of Camellia black beans rinsed
  • 7 oz can chipotle peppers in adobo
  • 1 can diced tomatoes with green chilies
  • Bay leaves
  • Tortillas for serving

For the Liquid Mix:

  • 2 cups chicken stock
  • 1 orange zested and juiced
  • 2 limes juiced

Instructions

  • Rinse and drain black beans at least 6 times. Optionally soak for 1-2 hours.
  • Cut pork into large chunks and season with spices. Add to crockpot with rinsed beans, onions, peppers, tomatoes, and green chilies.
  • Mix chicken stock, orange juice & zest, and lime juice. Pour over crockpot mixture. Add bay leaves.
  • Cook on high for 4 hours or low for 8 hours.
  • Serve on tortillas with guacamole, lime, sour cream, and cheese.
