In a deep baking dish, add sliced onions, drizzle with olive oil, and sprinkle with paprika, garlic & herb seasoning, and the garlic bulb. Cover with foil and bake at 400°F for 45 minutes, stirring halfway.
Meanwhile, wash and season the chicken with Cajun seasoning, Badia Complete seasoning, poultry magic, and garlic powder.
After 45 minutes, remove the foil from the onions. Add coconut milk, orzo, water with chicken bouillon, salt, pepper, and lemon juice. Mix, layer spinach on top, and add the seasoned chicken.
Return to the oven for 35 minutes. Then broil for 4-5 minutes to make the chicken skin crispy. Serve and enjoy!
