Preheat the oven to 375°F.
Heat a large cast iron skillet over medium heat. Add the ground beef and cook until completely browned, breaking it apart as it cooks. Drain any excess grease.
Season the cooked beef with salt, pepper, Worcestershire sauce, garlic powder, and onion powder. Stir in the diced pickles if using.
In a small bowl, whisk together the mayonnaise, ketchup, pickle juice, Worcestershire sauce, salt, and pepper until smooth.
Stir 2 to 3 tablespoons of the Special Burger Sauce into the cooked beef until evenly combined. Remove the filling from the skillet and set aside.
Press or roll each biscuit into a flat round circle. Add a small amount of shredded cheddar to the center followed by a generous spoonful of the cheeseburger filling.
Pull the edges of the biscuit dough up and over the filling and pinch tightly together at the top to seal completely. Flip so the pinched side faces down. Repeat with all remaining biscuits.
Brush the bottom of the cast iron skillet with a little melted butter. Arrange the cheeseburger bombs pinched side down in the skillet.
Brush the tops generously with the remaining melted butter and sprinkle with sesame seeds.
Bake at 375°F for 23 to 25 minutes until the biscuits are puffed, deeply golden, and cooked through.
Serve warm with the remaining Special Burger Sauce on the side for dipping.
