Ingredients

  • Chicken & Mozzarella tortillinis from refrigerator section.
  • 2 tbsp butter
  • ½ onion chopped
  • 4 cloves garlic chopped
  • sun dried tomatoes chopped
  • fresh basil shredded
  • 16.9 oz heavy cream
  • 1 cup chicken broth
  • 1 lemon zested and juiced
  • S&P
  • Garlic & Herb
  • Cajun seasoning
  • ½ cup mozzarella
  • ½ cup Parmesan freshly grated
  • rotisserie chicken shredded
  • Spinach

Instructions

  • In a pot, boil your tortellinis for 4 minutes. Drain and set aside. Empty the water from your pot.
  • Add in your butter, onion, and garlic. Cook a few minutes till translucent.
  • Add in your chopped sundried tomatoes and shredded basil. Let cook a few minutes. Add in heavy cream, lemon zest, 1/2 lemon juiced, and chicken broth. Let come to light boil.
  • Season with spices and add in mozzerella and ½ Parmesan. Add in chicken, tortellini’s, and spinach. Let spinach cook down and everything marry together.
  • Top with more Parmesan when serving!!
