In a pot, boil your tortellinis for 4 minutes. Drain and set aside. Empty the water from your pot.
Add in your butter, onion, and garlic. Cook a few minutes till translucent.
Add in your chopped sundried tomatoes and shredded basil. Let cook a few minutes. Add in heavy cream, lemon zest, 1/2 lemon juiced, and chicken broth. Let come to light boil.
Season with spices and add in mozzerella and ½ Parmesan. Add in chicken, tortellini’s, and spinach. Let spinach cook down and everything marry together.
Top with more Parmesan when serving!!
