1lb100% grass-fed ground beef
1yellow oniondiced
1bunch of green onionsdiced
1red bell pepperdiced
1green bell pepperdiced

1can of fire-roasted tomatoes
1can crushed tomatoes
2tbsptomato paste
1tbspsugar
3chipotle peppers in adobo
1can of chili beans
1can of pinto beansrinsed and drained
1can of red kidney beansrinsed and drained
32ozbeef broth
Chili Mix seasoning2 packs of McCormick chili seasoning or 1-5 alarm chili seasoning pack
Additional seasoningsas needed: Salt, pepper, chili powder, garlic powder, oregano, cumin, onion powder, red chili flakes (optional)
Instructions
Season your bite-size chuck roast with chili powder, salt, and pepper generously. In a Dutch oven, add olive oil over medium-high heat. Add the roast bites and sear on all sides. Remove the meat, leaving the juices in the pot.
Add ground beef, onions, garlic, and peppers to the pot. Cook until the meat is browned and the onions are translucent, about 7-10 minutes. Stir in the chili seasoning, allowing the flavors to blend for 2-3 minutes.
Add diced tomatoes, crushed tomatoes, chipotle peppers, tomato paste, beef broth, and sugar. Bring to a boil, mixing well.
Add the seared chuck roast pieces back into the pot, along with all beans. Cover and cook in the oven at 250°F for 2 hours, stirring occasionally. Alternatively, you can cover and simmer on the stovetop.
If the chili thickens too much, add more broth or water to thin it out as desired.
