High-Protein Breakfast Bites

Flaky puff pastry meets a protein-packed egg, turkey sausage, and veggie filling in these High-Protein Breakfast Bites, perfect for meal prep or on-the-go mornings.

Ingredients

  • 1 package of puff pastry
  • 6 eggs
  • 3 tbsp cottage cheese
  • 1 link of turkey sausage diced small
  • 1/2 bunch green onions diced
  • 1 handful of spinach diced
  • 1/2 cup shredded cheese

Instructions

  • Mix everything in bowl other than puff pastry and a little cheese to sprinkle on top.
  • Cut puff pastry into large squares, add to a greased muffin tin. Use an ice cream scooper to scoop mixture into muffin tin.
  • Bake on 350 20 minutes
  • Eat immediately or store in the fridge for 3-4 days!
