Whisk your eggs and season your bread crumbs in two separate bowls. Dip the pork chops in the egg wash first, then coat them thoroughly in the bread crumb mixture. Make sure all the pork chops are evenly coated and ready to cook.
In a pan or skillet, add enough EVOO to cover the bottom. Once the oil is hot, place the pork chops in the pan. Cook on one side for about 3-4 minutes until golden brown, then flip and repeat on the other side. Once both sides are cooked, remove the pork chops from the oil.
You can either use the same pan (after dumping out the oil) or transfer the pork chops to a casserole dish. Add a layer of tomato sauce to the bottom of the pan or dish, then place the pork chops at an angle. Layer mozzarella cheese between each pork chop.
Bake at 350°F for 13-15 minutes or until the cheese is bubbly. Enjoy!
