On parchment paper, lay down the dates and flatten them with a glass cup.
Spread a layer of peanut butter over the dates.
Sprinkle crushed almonds and pretzels on top of the peanut butter.
Add a layer of vanilla ice cream.
Heat the dark chocolate chips and coconut oil until melted.
Drizzle the melted chocolate over the layers.
Sprinkle a little sea salt on top.
Let the bark set in the freezer for at least 30 minutes.
Break off pieces to eat and enjoy!
