Strawberry Oatmeal Bars

These easy-to-make Strawberry Oatmeal Bars are perfect for breakfast, brunch, or dessert. Made with a sweet, fresh strawberry filling and a buttery oatmeal crust.

Ingredients

Crust and Topping:

  • ½ cup unsalted butter melted
  • 1 cup all-purpose flour
  • ¾ cup old-fashioned rolled oats
  • ½ cup granulated sugar
  • ¼ cup light brown sugar packed
  • ½ tsp salt to taste

Strawberry Layer:

  • 2 cups strawberries chopped fine
  • cup granulated sugar
  • 1 lemon squeezed
  • 2 tsp arrowroot starch or cornstarch

Instructions

  • Preheat the oven to 350°F. Melt butter in a large bowl and add the rest of the crust ingredients. Mix together. Set aside 1 heaping cup for the topping.
  • Line an 8x8 baking pan with foil and spray to prevent sticking. Layer the crust mixture in the bottom and pat it down firmly.
  • In a separate bowl, combine all the strawberry layer ingredients and mix together. Spread this mixture evenly on top of the crust. Sprinkle the reserved crust mixture over the strawberries.
  • Bake for 50-55 minutes, watching carefully. The crust should be toasted, and the strawberry layer should be bubbling. Let cool completely for at least an hour before cutting. Enjoy!
