- Butter
- Onion, chopped
- Garlic cloves, chopped
- Sun-dried tomatoes, chopped
- Fresh basil, shredded
- Heavy cream (16.9 oz)
- Chicken broth
- Lemon, zested and juiced
- Spices:
- Salt & Pepper
- Garlic & Herb seasoning
- Cajun seasoning
- Mozzarella cheese, shredded
- Parmesan cheese, freshly grated
- Rotisserie chicken, shredded
- Spinach
Directions to Make Chicken and Mozzarella Tortellinis

Cook the Tortellinis: In a pot, bring water to a boil and add the tortellinis. Cook for about 4 minutes. Drain the tortellinis and set them aside. Empty the water from the pot.

Sauté the Aromatics: In the same pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking for a few minutes until translucent and fragrant.

Build the Sauce: Add the chopped sun-dried tomatoes and shredded basil to the pot. Cook for an additional 2-3 minutes, allowing the flavors to blend. Pour in the heavy cream, chicken broth, lemon zest, and juice of half the lemon. Stir and bring the mixture to a light boil.

Season and Combine: Season the sauce with salt, pepper, garlic & herb seasoning, and Cajun seasoning. Add in the mozzarella and half of the Parmesan, stirring until the cheese melts. Add the shredded rotisserie chicken, cooked tortellinis, and spinach. Stir everything together and let the spinach cook down.

Serve: Once the sauce has thickened and everything is well combined, top the dish with more freshly grated Parmesan before serving.

- 2 tbsp butter
- ½ onion chopped
- 4 cloves garlic chopped
- sun dried tomatoes chopped
- fresh basil shredded
- 16.9 oz heavy cream
- 1 cup chicken broth
- 1 lemon zested and juiced
- S&P
- Garlic & Herb
- Cajun seasoning
- ½ cup mozzarella
- ½ cup Parmesan freshly grated
- rotisserie chicken shredded
- Spinach
Instructions
- In a pot, boil your tortellinis for 4 minutes. Drain and set aside. Empty the water from your pot.
- Add in your butter, onion, and garlic. Cook a few minutes till translucent.
- Add in your chopped sundried tomatoes and shredded basil. Let cook a few minutes. Add in heavy cream, lemon zest, 1/2 lemon juiced, and chicken broth. Let come to light boil.
- Season with spices and add in mozzerella and ½ Parmesan. Add in chicken, tortellini’s, and spinach. Let spinach cook down and everything marry together.
- Top with more Parmesan when serving!!
