The Brie is the move here. It melts into this creamy, slightly funky, rich layer over the beef that pairs with the apple butter and honeycrisp apple in a way that just makes sense. If you’ve never put Brie on a burger before this is your sign.
Ingredients Needed
The Burger
Ground beef formed into four patties and seasoned simply with salt and pepper. The toppings are doing the heavy lifting here so the beef doesn’t need much. Brie sliced and added in the last seven minutes of grilling melts into a creamy, slightly funky layer over the top.
The Bun
Brioche is non-negotiable for this burger. Its slight sweetness and soft, pillowy texture pair perfectly with the apple butter and hot honey already in the sandwich. Toast it cut side down on the grill for one minute before building.
The Toppings
Apple butter spread on the bottom bun adds a sweet, slightly spiced apple flavor as the base. Crispy bacon adds salt and crunch. Thin honeycrisp apple slices add fresh, crisp sweetness. Arugula adds a peppery contrast to all the sweetness happening in the rest of the burger. Hot honey drizzled over the assembled burger ties everything together with a little heat. Dijon mayo on the top bun adds a tangy, creamy finish.
How to Make Apple Brie and Bacon Burger
1
Whisk the mayonnaise and Dijon mustard together in a small bowl until smooth. Refrigerate until ready to use.
2
Season the patties generously with salt and pepper on both sides. Grill over medium-high heat for 4 to 5 minutes per side depending on thickness and your preferred doneness. In the last 7 minutes of cooking, lay the Brie slices over each patty and close the grill lid. Let the cheese melt completely before pulling the burgers off the heat.
3
Place the brioche buns cut side down on the grill for about 1 minute until golden and lightly toasted. Watch them ā brioche browns fast.
4
Spread apple butter on the bottom bun. Place the Brie-topped burger patty on top. Add the crispy bacon, thin apple slices, and a handful of arugula. Drizzle hot honey generously over everything. Spread the Dijon mayo on the top bun and close the burger. Serve immediately.

Instructions

- Grill over medium-high heat for about 4 to 5 minutes per side depending on thickness and your preferred doneness.
- In the last 7 minutes of cooking, lay the Brie slices over each patty and close the grill lid. Let the cheese melt completely over the burger.
- Toast the brioche buns cut side down on the grill for about 1 minute until golden.
- Build the burgers. Spread apple butter on the bottom bun. Add the Brie-topped burger patty. Layer on the crispy bacon, thin apple slices, and arugula. Drizzle hot honey over the top. Spread the Dijon mayo on the top bun and close the sandwich.
- Serve immediately.
Notes
- Add the Brie in the last 7 minutes with the lid closed so it melts fully without the burger overcooking. Brie takes a little longer to melt than regular cheese so give it time.
- Slice the apple as thin as you can. Thick apple slices are hard to bite through in a burger and throw off the whole balance of the sandwich.
- Toast the brioche buns on the grill right at the end. It takes one minute and keeps them from getting soggy under all those toppings.
- The apple butter on the bottom bun and the hot honey drizzle on top might sound like a lot of sweetness but they balance perfectly against the peppery arugula and the Dijon mayo.
