Cajun Shepherd’s Pie Risotto
This one is hard to explain and easy to love. It’s shepherd’s pie, but instead of mashed potatoes on top it’s all cooked together into a creamy Cajun-seasoned risotto in one pot. The Arborio rice absorbs the beef broth and red wine and CTH seasoning as it cooks and everything becomes this rich, slightly saucy, deeply flavored bowl that tastes like comfort food got a serious upgrade.

A Quick Look At The Recipe
- Recipe Name: Cajun Shepherd's Pie Risotto (Easy One-Pot Recipe)
- Main Ingredients: ground beef or ground lamb, onion, celery stalks, minced garlic, frozen mixed vegetables, bunch green onions, tomato paste, all-purpose flour
- Why You'll Love It: This Cajun shepherd's pie risotto combines ground beef or lamb with Arborio rice, red wine, beef broth, Cajun seasoning, and mixed vegetables cooked into a creamy one-pot risotto with all the flavors of a classic shepherd's pie.
The Cajun seasoning is what makes this specifically interesting rather than just shepherd’s pie in a different format. The CTH, garlic, onion, and paprika layered into the meat before the wine goes in builds a bold, slightly spiced base that carries through every bite of the finished risotto. It’s warm and hearty and a little different and everyone who tries it asks for the recipe.
Ingredients Needed To Make This Shepherd’s Pie Risotto
The Meat and Aromatics
Ground beef or ground lamb. Lamb is the more traditional shepherd’s pie protein and produces a slightly richer, more complex flavor. Ground beef is more widely accessible and works beautifully. Diced onion and celery cook down in the meat drippings. Minced garlic goes in after.
The Flavor Builders
Tomato paste caramelized briefly before the wine adds a concentrated sweetness. Flour helps thicken the sauce slightly. CTH seasoning, garlic powder, onion powder, Cajun seasoning, and paprika together build the bold, layered Cajun flavor base. Red wine deglazes everything and adds a depth that takes the whole dish somewhere really interesting.
The Risotto Base
Arborio rice toasted in the meat and seasoning mixture before the liquid goes in adds a nutty depth. Beef broth, Better Than Bouillon, and Worcestershire sauce are the primary cooking liquid. Water added gradually as the rice cooks keeps the risotto moving without diluting the flavor.
The Vegetables and Finish
Frozen mixed vegetables stirred in during the last 5 to 7 minutes heat through without getting mushy. Green onions stirred through and piled on top finish the dish.
How to Make Cajun Shepherd’s Pie Risotto
1
Heat a large deep skillet or Dutch oven over medium-high heat. Add the ground beef or lamb and break it apart as it cooks until fully browned. Drain excess grease if needed.
2
Add the diced onion and celery to the meat and cook for 3 to 4 minutes until beginning to soften. Add the garlic and cook for 1 minute.
3
Add the tomato paste, flour, CTH seasoning, garlic powder, onion powder, Cajun seasoning, paprika, and black pepper. Stir everything together and cook for about 1 minute until the tomato paste deepens slightly in color.
4
Pour in the red wine and immediately scrape up all the browned bits from the bottom of the pan. Let it simmer for 2 to 3 minutes until slightly reduced.
5
Add the Arborio rice and stir for 1 minute so it toasts in the meat and wine mixture. Add the beef broth, Better Than Bouillon, and Worcestershire sauce. Stir well and bring to a gentle simmer.
6
Reduce the heat to medium-low. Stir frequently. As the liquid absorbs add water 1/2 cup at a time waiting for most of it to absorb before adding more. Continue for 18 to 25 minutes until the rice is completely tender and the whole dish looks creamy and cohesive.
7
Stir in the frozen mixed vegetables in the last 5 to 7 minutes. Stir in most of the green onions. Taste and add salt only if needed. Serve immediately with the remaining green onions scattered on top.

- 1 tbsp Better Than Bouillon Beef Base
- 3 tbsp Worcestershire sauce
- 2 tbsp Creole Trinity and Herb seasoning
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- 1 cup Arborio rice
- Water about ½ cup at a time as needed
- Black pepper to taste
- Salt only if needed after tasting
Instructions
- In a large, deep skillet or Dutch oven over medium-high heat, brown the ground beef or lamb, breaking it apart as it cooks. Drain excess grease if necessary.
- Add the diced onion and celery and cook for 3–4 minutes until they begin to soften. Stir in the garlic and cook for another minute.
- Add the tomato paste, flour, Creole Trinity and Herb, garlic powder, onion powder, Cajun seasoning, paprika and black pepper. Stir everything together and cook for about 1 minute.
- Pour in the red wine, scraping up all those browned bits from the bottom of the pan. Let it simmer for 2–3 minutes to reduce slightly.
- Stir in the Arborio rice and let it toast in the mixture for about 1 minute. Add the beef broth, Better Than Bouillon and Worcestershire sauce. Stir well and bring to a gentle simmer.
- Reduce the heat to medium-low. Continue cooking and stirring frequently. As the rice absorbs the liquid, add ½ cup water at a time, allowing most of the liquid to absorb before adding more. Continue until the rice is tender and creamy, about 18–25 minutes.
- Stir in the frozen mixed vegetables during the last 5–7 minutes of cooking so they heat through without getting too soft.
- Stir in most of the green onions, reserving some for the top. Taste before adding any salt since the Better Than Bouillon, Worcestershire, Cajun seasoning and beef broth already bring plenty of saltiness. Add salt only if needed.
