- 1 large garlic bulb top cut off
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp garlic & herb seasoning
- 1 tbsp olive oil
- 1 pack chicken thighs with skin
- 2 tbsp Cajun seasoning
- 2 tbsp Badia Complete seasoning
- 2 tbsp poultry magic
- 2-3 handfuls of spinach
- 1 cup orzo
- 1/2 cup coconut milk
- 1/4 cup water mixed with 1 tsp Better Than Bouillon roasted chicken
- 1 lemon squeezed
Instructions
- In a deep baking dish, add sliced onions, drizzle with olive oil, and sprinkle with paprika, garlic & herb seasoning, and the garlic bulb. Cover with foil and bake at 400°F for 45 minutes, stirring halfway.
- Meanwhile, wash and season the chicken with Cajun seasoning, Badia Complete seasoning, poultry magic, and garlic powder.
- After 45 minutes, remove the foil from the onions. Add coconut milk, orzo, water with chicken bouillon, salt, pepper, and lemon juice. Mix, layer spinach on top, and add the seasoned chicken.
- Return to the oven for 35 minutes. Then broil for 4-5 minutes to make the chicken skin crispy. Serve and enjoy!
