How to Make Chuck Roast 3 Bean Chili

Cook the Veggies & Ground Beef: Add ground beef, onions, garlic, and peppers to the Dutch oven. Cook until the meat is browned and the onions are translucent, about 7-10 minutes. Add your chili seasoning and let everything cook together for 2-3 minutes.

Add Tomatoes & Flavorings: Stir in diced tomatoes, crushed tomatoes, chipotle peppers, tomato paste, and beef broth. Bring to a boil.

Ingredients
  

  • 3 lb Chuck Roast boneless and cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 lb 100% grass-fed ground beef
  • 1 yellow onion diced
  • 1 bunch of green onions diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 4 cloves of garlic minced
  • 1 can of fire-roasted tomatoes
  • 1 can crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp sugar
  • 3 chipotle peppers in adobo
  • 1 can of chili beans
  • 1 can of pinto beans rinsed and drained
  • 1 can of red kidney beans rinsed and drained
  • 32 oz beef broth
  • Chili Mix seasoning 2 packs of McCormick chili seasoning or 1-5 alarm chili seasoning pack
  • Additional seasonings as needed: Salt, pepper, chili powder, garlic powder, oregano, cumin, onion powder, red chili flakes (optional)

Instructions
 

  • Season your bite-size chuck roast with chili powder, salt, and pepper generously. In a Dutch oven, add olive oil over medium-high heat. Add the roast bites and sear on all sides. Remove the meat, leaving the juices in the pot.
  • Add ground beef, onions, garlic, and peppers to the pot. Cook until the meat is browned and the onions are translucent, about 7-10 minutes. Stir in the chili seasoning, allowing the flavors to blend for 2-3 minutes.
  • Add diced tomatoes, crushed tomatoes, chipotle peppers, tomato paste, beef broth, and sugar. Bring to a boil, mixing well.
  • Add the seared chuck roast pieces back into the pot, along with all beans. Cover and cook in the oven at 250°F for 2 hours, stirring occasionally. Alternatively, you can cover and simmer on the stovetop.
  • If the chili thickens too much, add more broth or water to thin it out as desired.
