Homemade Puff Pastry Pop Tarts
If you’ve ever craved a pop tart but wished it was a little flakier, fresher, and, well, homemade, this recipe is for you. These Homemade Puff Pastry Pop Tarts are everything you love about the nostalgic treat, but elevated with buttery puff pastry, real fruit filling, and a sweet vanilla glaze. They’re crisp on the outside, soft on the inside, and just the right amount of indulgent.

The best part? You can customize them with any filling you like, strawberry jam, Nutella, apple butter, or even something savory if you’re feeling wild. They come together quickly, bake up beautifully golden, and look stunning drizzled with glaze. Basically, it’s the kind of recipe that will have everyone thinking you went full pastry chef… but really, you just hacked puff pastry.
Before You Get Started
- Use parchment paper on your baking sheet so the pop tarts don’t stick.
- Keep your puff pastry cold until you’re ready to assemble, it bakes up flakier that way.
- Don’t skip the fork holes! They let steam escape so your tarts don’t puff into balloons.
- Let them cool before glazing, otherwise the icing will melt right off.
