How to Make Lasagna Soup

Cook the Meat & Aromatics: In a Dutch oven pot, sauté diced onion or shallot, minced garlic, ground pork, and Italian sausage. Cook until the meat is browned. Add Italian seasoning, dried basil, salt, and pepper, and cook for a few minutes to enhance the flavors.

Add the Tomato Base & Broth: Stir in crushed tomatoes, tomato paste, sugar, and chicken broth. Bring the soup to a boil.

Prepare the Cheese Mixture: In a separate bowl, mix together ricotta, mozzarella, shredded Parmesan, and Italian seasoning. Set aside.

Add Noodles & Fresh Basil: Once the soup is boiling, add in broken lasagna noodles and fresh basil. Tear the basil into the soup after giving it a “slap” to release its aromatics. Let cook for 10-15 minutes or until noodles are tender.

Lasagna Soup – A quick and delicious one-pot meal packed with Italian flavors, tender noodles, and a cheesy topping. The perfect comfort food for any occasion!

Ingredients
  

  • 1 lb ground pork
  • 1 lb ground Italian sausage or premade meatball mix
  • 1 yellow onion or shallot diced
  • 3 cloves of garlic minced
  • 28 oz can crushed tomatoes
  • 1/4 cup tomato paste
  • 1 box chicken broth
  • 1/2 box lasagna noodles broken into bite-sized pieces
  • 2 tsp sugar
  • Fresh basil for garnish
  • 1 tbsp dried basil
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 1-2 tsp crushed red pepper flakes optional

Cheese Mixture:

  • 1/4 cup ricotta cheese
  • 1/4 cup mozzarella cheese
  • Shredded Parmesan cheese
  • Italian seasoning

Instructions
