  • 1 tbsp St. Elmo’s seasoning or other burger seasoning
  • salt & pepper to taste
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 10-12 slices of cheddar slices. Can use mild cheddar white cheddar, or combination of both
  • 1/2 onion diced small
  • 1/2 cup of dill pickles diced small
  • 8 oz bag of shredded triple cheddar
  • 2 tbsp melted butter

Big Mac Sauce:

  • 1 cup mayo
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle juice
  • 2 tsp sugar
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  • Preheat oven to 350
  • In a skillet, cook the ground meat until done and season with seasonings above. Drain the grease
  • In a bowl, mix the sauce ingredients together and set to the side
  • On a sheet pan, spray the bottom with non stick and start building your quesadilla. Add 3 tortillas to the top, 3 on the bottom, and 1 on each side. Be sure to leave half of the tortillas folded over the sides. If there is still space in the middle, cover with another tortilla.
  • Line the bottom with your cheese slices, then your ground meat, next layer is your sauce (leave some for dipping), then your onions and pickles, and top with your shredded cheese.
  • Add another tortilla on top in the middle and fold in the sides, then the top and bottom. Brush melted butter on top, cover with another Sheetpan of the same size and bake in the oven for 30 minutes. Remove the top pan and bake for another 5-7 minutes until golden brown.
  • Remove the quesadilla, let it cool for 5 minutes and cut into squares!
