Cowboy Cheese Dip

Cowboy Cheese Dip is the ultimate game day appetizer. Loaded with cheddar, pepper jack, Monterey Jack, hot sausage, and a kick of taco seasoning, this baked dip is creamy, spicy, and perfect for feeding a crowd.

Ingredients

  • 16 oz block mild cheddar
  • 16 oz block pepper jack
  • 16 oz block Monterey Jack
  • 1 lb hot jimmy dean sausage
  • 1 can rotel
  • 1 can green chilies
  • Chopped cilantro
  • 1 packet taco dip
  • 1 can evaporated milk

Instructions

  • Preheat oven to 350°F.
  • Cook sausage in a skillet over medium heat until browned and crumbled. Drain grease.
  • In a large baking dish, combine sausage, cubed cheeses, Rotel, green chilies, cilantro, taco seasoning, and evaporated milk. Mix well.
  • Bake for 25 minutes. Stir to combine.
  • Return to oven and bake another 10 minutes, until hot and bubbly.
  • Garnish if wanted and serve warm with tortilla chips.
