Preheat oven to 350°F.
Cook sausage in a skillet over medium heat until browned and crumbled. Drain grease.
In a large baking dish, combine sausage, cubed cheeses, Rotel, green chilies, cilantro, taco seasoning, and evaporated milk. Mix well.
Bake for 25 minutes. Stir to combine.
Return to oven and bake another 10 minutes, until hot and bubbly.
Garnish if wanted and serve warm with tortilla chips.
