Crockpot Spaghetti Squash with Chicken Meatballs in Vodka Sauce

Crockpot spaghetti squash with chicken meatballs in vodka sauce is an easy one-pot slow cooker meal. Tender chicken meatballs simmer in creamy vodka sauce with soft strands of spaghetti squash for a low-carb, comforting dinner. Simple, flavorful, and perfect for busy nights or meal prep.

Ingredients

  • 1 Spaghetti squash cut in half and seeds scooped out
  • 1 jar of vodka gravy sauce
  • 1 lb ground chicken
  • 2 hefty tbsp cottage cheese
  • 3 tbsp Italian seasoning
  • 1 tbsp minced garlic
  • 1 tbsp Cajun seasoning
  • 1 tbsp onion powder

Instructions

  • Mix all ground chicken mixture together, set in fridge.
  • Microwave your squash for 5 minutes to soften. Cut in half and remove the seeds.
  • In your crockpot, pour in your bottle of vodka sauce. Add a little water to the jar, shake and pour the remainder in.
  • Place your squash half face down in the crockpot.
  • With an ice cream scooper, scoop out your meat mixture forming little balls and just add to the crockpot all around the squash.
  • Cook on high 6 hours, remove squash and scrap up the noodles, add to a bowl and top with your meatballs and gravy
