How To Make BBQ Chicken Dip

1

Sauté the veggies: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced red onion, ½ bunch of green onions, and red bell pepper. Cook for 8-10 minutes, stirring occasionally, until the vegetables are soft and caramelized.

2

Mix ingredients: In a large mixing bowl, combine softened cream cheese, sour cream, shredded pepper jack cheese, shredded rotisserie chicken, diced banana peppers, ⅓ cup BBQ sauce, ranch dressing, BBQ rub, Creole seasoning, and Holy Trinity seasoning. Add in the sautéed onion and pepper mixture, then stir everything together until fully combined.

3

Assemble the dip: Transfer the mixture into an oven-safe baking dish, spreading it out evenly. Pour the remaining ⅔ cup BBQ sauce over the top, smoothing it into an even layer. Sprinkle the shredded Colby Jack cheese generously over the surface.

4

Bake: Place the dish in a preheated 375°F oven and bake for 20-25 minutes, or until the cheese is fully melted and bubbling around the edges.

5

Garnish & serve: Remove from the oven and sprinkle the remaining diced green onions on top for a fresh burst of flavor. Serve warm with Fritos, tortilla chips, crackers, or toasted bread slices, and enjoy!
