Apricot Brie Bites
If fall entertaining had a mascot, it would be these Pumpkin-Shaped Apricot Brie Bites. Buttery puff pastry wrapped around creamy brie and sweet apricot jelly, baked until golden, and finished with a sprinkle of cinnamon sugar—they’re as festive as they are delicious. The best part? They look like little pumpkins thanks to some simple twine and a cinnamon stick “stem.”

These little bites are the ultimate appetizer for Halloween parties, Thanksgiving spreads, or cozy autumn nights with a glass of wine. They’re easy to make, totally customizable with your favorite jams, and guaranteed to disappear fast.
Before You Get Started
- Make sure your puff pastry is thawed but still cold—it will puff up best this way.
- Tie the butchers twine snugly but not too tight, since the pastry will expand as it bakes.
- Let the bites cool for a few minutes before removing the twine so they hold their shape.
