Blend the Base
Add the hulled fresh strawberries, white balsamic vinegar, honey or maple syrup, Dijon mustard, garlic if using, salt, and black pepper to a blender. Blend on medium-high speed until completely smooth and no strawberry chunks remain. The mixture will be a vivid, slightly thick fruit purƩe at this point.

Emulsify with the Olive Oil
With the blender running on its lowest speed, remove the center cap from the blender lid and slowly drizzle the olive oil into the running blender in a thin, steady stream. This slow addition while the blender is running is what creates a proper emulsion. If your blender doesn’t have a removable center cap, add the oil all at once after blending the base, cover, and blend again on high for 30 to 60 seconds.

Taste and Adjust
Taste the finished dressing and adjust as needed. A little more honey if the strawberries were tart, a splash more vinegar if you want more acidity, a pinch more salt to sharpen everything. Pour into a jar or sealed container and refrigerate until ready to use.
